Christmas-mode
It’s not that many days left until Christmas now and I am in full Christmas-mode. I love everything about this holiday; the feeling, the taste, the smell, the sight, the sound. I’ve decorated practically ever surface of the house and Christmas music is blasting through the stereo, the smell of ginger, cinnamon, carnation, saffron and other Christmasy things linger in the air. Gotta love Christmas!
A taste of Christmas
Spicy roasted nuts and almonds
These nuts are really delicious and Christmas-y!
7,5 deciliter nuts - cashews, almonds, walnuts, hazelnuts or/and pistachios
1 1/2 deciliter sugar
1 teaspoon salt
1 tablespoon cinnamon
1/2 teaspoon ginger (fresh or dried)
1 egg white
1 tablespoon hot water
Follow these steps:
Preheat the oven to 140 degrees Celsius and place a baking sheet on the oven tin.
Place all the nuts in a bowl . Add sugar, salt, cinnamon and ginger in the bowl and mix thoroughly with your hands.
Pour the egg white in a cup, add the hot water and whisk with a fork until it becomes foamy. Pour the egg white over the nuts and mix again so that all nuts are coated.
Pour the nuts on plate and spread them out properly. Insert the tray into the oven for 35 minutes. Let the nuts cool before breaking into smaller pieces.
Store in an airtight jar.
Saffron Panacotta topped with blueberries (4 portions)
This is a favorite in my family. We do panacotta quite often, since it’s so easy and super delicious! This is a more Christmas-inspired version.
1 deciliter jelly sugar
4-5 deciliter cream
1 packet saffron (0,5 g)
Mix all the ingredients together and let them boil in a saucepan for 1/2 min. Pour in serving glasses and let them cool off until they are jelly-like. Put some blueberries on top and they are ready to serve. Easy as ABC!

A sight of Christmas!
One of the most Christmas-y things and the most important for that Christmas feeling for me, is snow. Whenever the ground are covered in white I get this Christmas feeling.

Even though it’s cold outside, at least here, Christmas to me is warm. Whether it is the warm feeling in your heart or from the fireplace, or just the holiday in itself, Christmas is warmth.
