Christmas-mode

It’s not that many days left until Christmas now and I am in full Christmas-mode. I love everything about this holiday; the feeling, the taste, the smell, the sight, the sound. I’ve decorated practically ever surface of the house and Christmas music is blasting through the stereo, the smell of ginger, cinnamon, carnation, saffron and other Christmasy things linger in the air. Gotta love Christmas!

A taste of Christmas

Spicy roasted nuts and almonds

These nuts are really delicious and Christmas-y!

7,5 deciliter nuts - cashews, almonds, walnuts, hazelnuts or/and pistachios

1 1/2 deciliter sugar

1 teaspoon salt

1 tablespoon cinnamon

1/2 teaspoon ginger (fresh or dried)

1 egg white

1 tablespoon hot water

Follow these steps:

Preheat the oven to 140 degrees Celsius and place a baking sheet on the oven tin.

Place all the nuts in a bowl . Add sugar, salt, cinnamon and ginger in the bowl and mix thoroughly with your hands.

Pour the egg white in a cup, add the hot water and whisk with a fork until it becomes foamy. Pour the egg white over the nuts and mix again so that all nuts are coated.

Pour the nuts on plate and spread them out properly. Insert the tray into the oven for 35 minutes. Let the nuts cool before breaking into smaller pieces.

Store in an airtight jar.

Saffron Panacotta topped with blueberries (4 portions)

This is a favorite in my family. We do panacotta quite often, since it’s so easy and super delicious! This is a more Christmas-inspired version.

1 deciliter jelly sugar

4-5 deciliter cream

1 packet saffron (0,5 g)

Mix all the ingredients together and let them boil in a saucepan for 1/2 min. Pour in serving glasses and let them cool off until they are jelly-like. Put some blueberries on top and they are ready to serve. Easy as ABC!

A sight of Christmas!

One of the most Christmas-y things and the most important for that Christmas feeling for me, is snow. Whenever the ground are covered in white I get this Christmas feeling.

Even though it’s cold outside, at least here, Christmas to me is warm. Whether it is the warm feeling in your heart or from the fireplace, or just the holiday in itself, Christmas is warmth.

I've started writing again. I have these periods where I write a lot, but never do anything about it. Then there are other times when my creativity is below zero and the things that I do try to write are flat, with no life in the words. This time I write a lot of poetry, or just little notes of wisdom, mostly for my own eyes. And I've also started to write a story, but knowing me it may never be finished. In my head, it's a story about learning who you are, but also accepting who you are. I've met some people that try so hard to change who they are, but why do that. You are who you are, and you should be proud of that. Then there will eventually be love. Because love is inevitable. Love is all around us, whether we accept to acknowledge that or not. It may not be the kind of love that we search for, but it can be love for music, for a fruit or a friend - but it's always there.

The season of melancholy...


It is said that autumn is the season of melancholy. The possibilities of summer and warmth are gone and the chill of the winter is near. The sky turns grey, the plants prepare for the cold and darkness and so do we humans. Many people dislikes autumn. I am not one of them. I love the fiery colours of the leafs. The brisk and refreshing feeling of the fall air. The way the year slowly brings us winter, in preparation of sorts. Fall is a really cosy season. It is fireplace, cardigans, tea or hot cocoa. 

Enjoy the cosy season while you can!

One of those things I just hate.

It's funny how much bigger your room seems to be when you clean it. For your information - my room appears small more times than big. I'm not the biggest fan of cleaning, if you put it in other words; I hate it. I think it is a waste of time and only do it when really necessary. Which is when I can barely open the door to my room because of all the junk lying around on the floor. I think a big problem is that I just have too much stuff. Stuff that aren't even usable, that are kept anyway. But even though I hate cleaning, I've come to realize that when I actually do clean, I do it really thoroughly. I clean it all.

Starlit night

Were you able to see the sky tonight? Really see? I don't think I've ever seen anything so beautiful before. The rich, dark blue sky and the vivid and brilliant stars shining. I could not stop looking. In that moment, I promised myself that if a shooting star crossed the sky, I would wish for the world to always be like this; calm, peaceful, untouched, absolutely beautiful and a place where everything is possible.

This song gives me the chills every single time I hear it. Every single time.
